WThis is a simplified version of a beverage from the seasonal menu. This is a batch pre-mixed which is packed with the flavours of the Christmas time, which makes it perfect for a holiday party. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or to mix another batch of bikinis.
Bikini Recipe
Yields 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place every items in a pot, bring to a light boil, agitating to dissolve. After that, remove from the stove and leave to cool down completely. Decant into an clean bottle, close it and refrigerate it in the refrigerator, it will last for about one month.
Preparing the Premix: Pour the specified liquid ingredients into a big jug, allow it to infuse for an hour, then filter it , ideally through muslin, making it completely strained.
When ready to serve: Pour 85ml of your premix to a cocktail shaker packed with ice, and agitate lightly for one minute until cold. Filter into a chilled martini glass or similar, top with some cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
